Too Many Cucumbers

I spent about an hour tonight pulling up weeds in my forgotten garden. (It wasn't really that I forgot about it; I just haven't had the time to deal with it lately.)

The tomato plants are finally starting to yield a little bit, but not much. The cucumbers however, are going to town! I found a few real doozies out there hiding under the leaves.

What am I supposed to do with all these?! I don't need yet another job I don't have time for, like pickling them.

There's only so much cucumber salad we can eat! Been meaning to try some cuke soup but haven't yet. Once we get some good red tomatoes, I can use both vegetables to make my mom's great gazpacho recipe, (well, it's actually my Spanish Aunt Pili's recipe, but I got it from my mom.) Till those tomatoes turn red though, hmmmm....Can you freeze cukes? I think not.

Any one have any great, easy recipes for me?

  1. Fried Cucumbers Recipe:

    1/2 cup vegetable oil
    2 cucumbers, peeled and sliced
    1 cup cornmeal
    salt to taste

    DIRECTIONS

    Heat the vegetable oil in a large heavy skillet over medium high heat. Line a plate with a paper towel; set aside.
    Roll the cucumber slices in the cornmeal. Fry the slices in the hot oil, a few at a time, until golden brown, about 2 minutes per side. Transfer the cucumbers to the prepared plate; sprinkle with salt to serve.
    Variation: Measure 1/2 cup cornmeal- keep it dry. Add to 1 cup cornmeal, 1 egg and about 1/3 cup beer. Toss cucumber slices in the dry mix and then in the wet. Then fry. Yum! Good with Ranch dip or Ketchup
